Grilled Tandoori Chicken
Ingredients:
16 Bamboo skewers
For tandoori marinade:
1tsp paprika
1 tsp turmeric
1/4 cup fresh lemon juice
1/2 cup non-fat plain yogurt
2 large cloves garlic
1 tbsp grated, fresh ginger root
1/2 tsp ground coriander seeds
1/2 ts ground cumin
1/4 tsp cayenne pepper
1lb boneless, skinless chicken breast
For the yogurt sauce:
1/2 cup non-fat plain yogurt
1 tbsp fresh lemon juice
1/4 tsp cayene pepper
1tbsp chopped cilantro leaves
Cooking:
Soak skewers in water for 30 min.
Mix all ingredients for marinade together and set aside
Cut chicken into 16, 1 inch strips. Add to marinade and coat well. Cover
and refrigerate at least 30 min.
Meanwhile, preheat grill and make th sauce. Combine all ingredienats for the yogurt
sauce, spoon into serving bowl and let stand at room temperature while you cook the chicken.
Skewer each piece of chicken and place on grill. Cook about 2 minutes each
side until the chicken is cooked through. Serve with the yogurt sauce.
